This happened to me, but it was “have you heard of our lord and savior” rather than just a hi, so I was very pissed.
On the plane, I put on headphones without playing anything, just so people will not talk to me

EDIT: Assuming it’s two people who know each other already. Why would a stranger go up to you, to ask how’s it going, when they don’t know you at all?

If I recognize someone, then I’ll ask them how’s it going, either to be polite, or because I genuinely care about them
“Fuck whatever you are doing, I want to talk to you right now for not reason at all” is not a very polite message to pass.
If people make themselves uncomfortable just so they can clearly tell you that they do not want to talk to you… it may be because they don’t want to talk to you.
If someone has headphones on, you can wave, and if they take them off then greet them. If they have no headphones in, you can just greet them
If you are waving at people that clearly aren’t in the mood for empty chatting, it’s certainly because you have something important to say.
Someone with headphones on does not necessarily mean they wouldn’t want to chat. And a wave doesn’t necessarily mean the waver wants to chat either (I don’t mean waving right next to someone to get their attention)

And you don’t understand how that may come off as assholish behaviour.
I have absolutely no idea at all. Completely blank. I’m not American, so it’s most likely a difference in culture. Chatting to people I know, has always been a pleasant experience.
